Yoghurt drinks are a much welcomed treat, especially as temperatures heat up. Because yoghurt has a pH that is lower than that of classic milk shakes yet has a higher viscosity, the challenge lies in developing a hydrocolloid compound that gives a stable foam even in an acid environment, says Felix Rohse of Hydrosol in Germany.
“On the one hand the compound has to meet the requirements for a stabilizer, and on the other hand the yoghurt shake must not gel. And the compound must ensure a very pleasant, light mouth feel,” he says.
For this reason, the company recently introduced a powdered stabilizer, Stabisol MSM 14, that allows for synergisms between different hydrocolloids. After mixing first with hot water, the stabilizer is added to the yoghurt where it forms a protective colloid for the protein in the yoghurt. The product can then be heated and pasteurized safely.
