Fairmont Singapore announces the appointment of Davide Bizzarri as the new Italian Chef of its much-loved Italian restaurant, Prego. For over 30 years, Prego has been a destination for authentic Italian flavours amidst a colourful and convivial setting that is reminiscent of Italy’s well-loved sights and sounds.
Chef Davide Bizzarri brings over 20 years of culinary experience and ardent love for Italian food, with a focus on Pisan and Tuscan flavours, to Prego. He studied at the Italian School “IPSSAR Matteotti” before returning to his beloved hometown of Pisa to begin his career working at restaurants locally. Arriving in Singapore in the early 2000s at the promising age of 20, Chef Bizzarri’s culinary journey includes notable roles at Senso Ristorante, La Nonna Ristorante, and Cova Pasticceria.
For the past 14 years, he was the Chef de Cuisine at Hotel Michael in Resorts World Sentosa. During his tenure, Chef Bizzarri was tasked to lead and oversee diverse responsibilities, showcasing his versatility and multi-faceted culinary abilities coupled with leadership and management skills. In addition to breakfast and all-day dining operations, Chef Bizzarri flawlessly executed à la carte lunch and dinner services at the esteemed Fratelli restaurant.
He launched successful new culinary concepts, including the Italian Pizzeria ventures and the highly acclaimed “Curate Cucina Pisana” in October 2021, a restaurant paying homage to his Pisan heritage. Most recently, in early 2023, Chef Bizzarri took the helm at Michelin-starred Table 65, and was instrumental in helping the restaurant to retain its prestigious accolade.

In his new role, Chef Bizzarri will oversee culinary operations and revitalise Prego’s menu, promising a delightful fusion of traditional Italian cuisine and his regional specialties.
