The St. Regis Singapore will host Marriott International’s Luxury Dining Series 2025 from 29 to 31 August 2025. The Luxury Dining Series by Marriott International is a multi-city regional dining event that takes place from July to September 2025 across the Asia Pacific. Apart from The St. Regis Singapore, this year’s line-up of luxury hotels includes The St. Regis Osaka, JW Marriott Jeju Resort & Spa, JW Marriott Bengaluru Prestige Golfshire Resort & Spa, The Ritz-Carlton, Perth, The St. Regis Jakarta, and The Ritz-Carlton, Bangkok. Each property will offer curated culinary experiences that celebrate the revival of forgotten flavours and culinary traditions by Marriott International’s pool of talented chefs and mixologists.
Held across four of the hotel’s signature venues — Yan Ting, The Astor Grill, The Tea Room, and the soon-to-be-launched St. Regis Bar Singapore, guests can look forward to a multi-sensory culinary journey through forgotten flavours, storied ingredients, and techniques that once defined culinary traditions across cultures, now elevated and reinterpreted by modern visionaries.
An Imperial 4-Hands encounter
Executive Chinese Chef Chan Chung Shing of Yan Ting at The St. Regis Singapore will collaborate with Chef Daniel Wong of the One MICHELIN-starred Jin Xuan at The Ritz-Carlton Shanghai, Pudong to present a four-hands lunch and dinner dining experience befitting royalty on 29 and 30 August 2025.
Highlights on the six-course dinner menu (from $228++ or $298++ with wine pairing) include the Shunde Crispy Golden Gold Coin Crab Cake, a dish traditionally prepared with chicken liver that resembles a string of ancient golden coins, and the White Pepper Chicken Soup with Pork Tripe and Fish Maw which originates from the Qing Dynasty for restoring the health of Emperor Qianlong’s concubine. It remains popular today as a nourishing staple.
For the Dim Sum Brunch (from $168++), both chefs reunite to present a vibrant expression of dim sum tradition with special items like Phoenix Tail Prawn Toast with Caviar, and Simmered Thai Pomelo Skin with Shrimp Mousse and Dried Shrimps in Roe Sauce.
A local interpretation of our afternoon tea ritual
Over at The Tea Room, Chef Angela Lai, Asia’s Best Pastry Chef 2021, alongside Executive Pastry Chef Ng Chee Leong of The St. Regis Singapore, proudly present a locally-inspired Afternoon Tea showcase (from $65++ with a glass of sparkling tea or $95++ with a glass of champagne).
Presented in The Tea Room’s urban summer garden oasis, the menu reinterprets beloved local flavours through imaginative bites. Guests are invited to indulge in unlimited servings of Buah Keluak Scones, savouries like Rojak Kueh Pie Tee with Mango Pearls, and sweets such as Coconut Macarons with Gula Melaka Ganache, and other creations that pay fitting tribute to Singapore’s Diamond Jubilee.
Asia’s 50 Best Bars takeover
The soon-to-debut St. Regis Bar Singapore will open its doors for a bar takeover by Paulo Naranjo, Bar and Beverage Manager of The St. Regis Jakarta (No. 22 of Asia’s 50 Best Bars 2025), and Marco Dognini, Bar Manager of Bar Sathorn at W Bangkok (No. 48 on Asia’s 50 Best Bars 2025). The duo will get behind the bar with the hotel’s mixologists to present an inspired cocktail menu that captures the spirit of forgotten flavours and techniques. Cocktails are priced from $26++.
A contemporary showcase of Italian and Portuguese cuisine
At The Astor Grill, three acclaimed chefs – Chef Vladmir Veiga, Head Chef of One MICHELIN-starred LAB by Sergi Arola at The Ritz-Carlton, Penha Longa Resort, Executive Chef Fabio Granata of The St. Regis Singapore, and Chef de Cuisine Angelo Sergio of The Astor Grill will present a six-hands tasting dinner menu (from $198++ or $298++ with wine pairing) that blends Portuguese and Italian influences.
Guests will be reintroduced to dishes such as Carabineiro Prawns with Veal Sweetbreads, enhanced by barrel-aged notes from Madeira wine, while Chef Fabio revives an Italian classic with his Cod Fish “Trippette”, a braised dish using cod maw, served with white corn polenta and tomato gravy. For dessert, Chef Angelo presents Zuppa Inglese, a refined interpretation of the beloved 1980s dessert, layered with Alchermes-soaked pain de gêne, and alternating layers of vanilla and chocolate.
On Sunday, 31 August, the three chefs will bring the weekend to a celebratory close with TheAstor Grill Brunch (from $138++ or $198++ with free-flow champagne), held from 12:30 PM to 3:00 PM. The convivial brunch will feature a big paella-style Lobster Rice, a Bloody Mary bar, à la minute culinary theatre, the quintessential St. Regis champagne sabrage, and a live jazz band.
