Ireland’s world-class produce takes centre stage in Singapore this October, as Bord Bia (The Irish Food Board) presents A Taste of Ireland: Samhain Edition, a month-long culinary celebration of Ireland’s ancient harvest festival and its world-class produce, inviting diners in Singapore to commemorate the cultural origins of Halloween. Partnering with seven of Singapore’s most celebrated restaurants, this campaign is set to introduce diners to the quality, provenance, and sustainability of Irish produce.

Running from 15 October to 15 November 2025, A Taste of Ireland unites six of Singapore’s most celebrated restaurants, including Cygnet by Sean Connolly, Brasserie Astoria, Carnaby, UMMI Beirut, Morsels, and Boaters Bar at ONE°15 Marina Sentosa Cove. Through exclusive dishes inspired by Ireland’s grass-fed beef, rich dairy, and pristine Atlantic seafood, the campaign peels back the layers of modern Halloween to mark its origins in a tradition called Samhain (pronounced “Sow-in”).

Celebrated over 2,000 years ago, Samhain marked the end of the harvest and the beginning of winter, a time when communities gathered around fires to share food, honour abundance, and welcome the turning of the year. A Taste of Irelandreimagines that spirit of warmth and gathering for modern tables in Singapore, using Ireland’s grass-fed beef, tender duck, rich dairy, and pristine Atlantic oysters to reveal the festival’s influence on today’s Halloween traditions. 

Carnaby 

“What’s the Quack?” and “Shanky Panky”

Carnaby brings a playful British twist to Irish harvest flavours, with two exclusive creations by Chef Adam Penney for A Taste of Ireland. The “What’s the Quack?” features a confit duck leg from the Irish Duck Company, served with colcannon, charred sprouts, wild blackberries, and a hot honey-thyme jus, presenting a hearty, seasonal dish that balances richness with brightness. It is paired perfectly with the “Shanky Panky, a bold cocktail of Born Irish Whiskey, Shanky Whip, Campari, and blood orange bitters, inspired by the convivial warmth of an Irish pub gathering. 

Boaters Bar at ONE°15 Marina Sentosa Cove

Char-Grilled Irish Oysters and Irish Duck Breast at Boaters Bar, ONE15 Sentosa Cove

Singapore’s only floating bar, Boaters Bar at ONE°15 Marina Sentosa Cove celebrates Ireland’s connection between land and sea, presenting two exclusive dishes for A Taste of Ireland. The Char-Grilled Irish Oysters are flame-grilled over an open fire, brushed with herb butter, and lightly finished with sea salt for a smoky, briny finish. The Irish Duck Breast is served with a Blackpitts orange reduction, red wine pear, and velvety mash, delighting guests with a balance of richness and citrus brightness that highlights the natural quality of Irish produce.

UMMI Beirut

Rooted in the spirit of family and togetherness, UMMI Beirut presents a special four-course set menu for A Taste of Ireland. The meal opens with Lebanese Lentil Soup Shots, followed by UMMI’s Silky Hummus Beiruti and Ostra Regal Oysters topped with pomegranate molasses.

The main course, 7 Spices Duck Leg with Orange Glaze, is served with grilled cabbage and preserved fennel, before concluding with Cannoli Baklawa served with yoghurt, and Irish ice cream. Reflecting UMMI’s name (“mother” in Arabic) the menu embodies warmth, care, and the joy of gathering around a shared table, all crafted with Halal-certified ingredients.

Cygnet by Sean Connolly, QT Singapore

At this smouldering bar-and-grill, the essence of Irish comfort food takes on new depth. A tender Irish fillet rests atop buttery colcannon, finished with a silky whiskey cream sauce, serving a dish that captures the fireside warmth and convivial spirit of Ireland’s harvest season.

Brasserie Astoria

Within the grandeur of Victoria Theatre, Brasserie Astoria has launched a new dish that pays tribute to the harvest with Aged Irish duck, paired with indulgent browned butter hollandaise, salad verte with Parmesan, and spicy pommes frites. Guests can enjoy a sophisticated nod to the abundance that defines Ireland’s autumn tables.

Commitment to sustainability and excellence

Beyond exceptional taste, A Taste of Ireland celebrates the sustainability and traceability that define Irish food production. Ireland is home to Origin Green, the world’s first national food and drink sustainability programme, ensuring every ingredient is produced with care for the environment, animal welfare, and future generations. More than 61,000 farmers and 300 food companies across Ireland participate in this initiative, setting a global benchmark for responsible food production.
