CP Kelco launches new pectin solution for salted buttermilk

Salted buttermilk is a staple drink in India. It is made with yogurt, spices and herbs and is known for aiding digestion and cooling down your body after a heavy meal. Although consumers prefer its salty taste, the high salt content gives it a gritty mouthfeel and leads to protein aggregation.

To address this issue natural ingredients provider CP Kelco has produced the GENU® Pectin YM-SAL 200. This product is a stabilising solution created from citrus peels that are sustainably sourced. Tolerating up to 0.8% of salt content, this pectin increases the shelf life of buttermilk and improves its salty taste, which consumers enjoy.
