Marlene® presents “Norbert’s Diary: A culinary journey”

Flavour experts discuss the Daughter of the Alps apple and its food pairings. The different varieties are combined with cheese, meat, wine, and pastry ingredients to introduce consumers to the world of the apple and its origins.

The journey of Marlene® through the flavours and seasons of South Tyrol – Südtirol continues with Norbert Niederkofler and the biggest experts on the most authentic flavours of the local territory, from cold meats to wine, cheese to pastry. Having touched on its origins with the Daughter of the Alps claim and revealed the importance of the seasons, Marlene® has led consumers into a world of flavours, fragrances, and textures in the discovery of its varieties with the Aroma Wheel and embarked on a culinary journey with Norbert Niederkofler, winner of three Michelin stars and a green star for sustainability.

Now the journey continues with a new chapter, the Diary of Norbert Niederkofler’s Culinary Journey: a project in which the chef, accompanied by four masters of flavour, explains to consumers how to exalt the Marlene® varieties through a range of different pairings, some traditional, others more original. Cheese expert Johann Baumgartner, master butcher Oskar Saxl, sommelier Valeria Hinna Danesi and pâtissier Alessio Billeci share their tips and experiences and reveal their favourite variety of apple.

In the Diary of Norbert Niederkofler’s Culinary Journey, every flavour expert is given a season, a reminder to consumers that the flavours of Marlene® can be enjoyed all year round. Spring is represented by cheese affineur Baumgartner, summer is the season of meat expert Saxl, sommelière Danesi of the AlpiNN restaurant is the connoisseur of choice for the autumn, while the winter is the territory of Billeci, pâtissier of Atelier Moessmer.
