The journey of Marlene® through the flavours and seasons of South Tyrol – Südtirol continues with Norbert Niederkofler and the biggest experts on the most authentic flavours of the local territory, from cold meats to wine, cheese to pastry. Having touched on its origins with the Daughter of the Alps claim and revealed the importance of the seasons, Marlene® has led consumers into a world of flavours, fragrances, and textures in the discovery of its varieties with the Aroma Wheel and embarked on a culinary journey with Norbert Niederkofler, winner of three Michelin stars and a green star for sustainability.
Now the journey continues with a new chapter, the Diary of Norbert Niederkofler’s Culinary Journey: a project in which the chef, accompanied by four masters of flavour, explains to consumers how to exalt the Marlene® varieties through a range of different pairings, some traditional, others more original. Cheese expert Johann Baumgartner, master butcher Oskar Saxl, sommelier Valeria Hinna Danesi and pâtissier Alessio Billeci share their tips and experiences and reveal their favourite variety of apple.
“It was a pleasure to go on this journey with Marlene® and lots of other friends that have always celebrated the flavours of South Tyrol – Südtirol,” comments Norbert Niederkofler. “The apple is a key part of our culinary tradition, a surprisingly versatile fruit that can be used in lots of different ways and at any time of day.
