Nature-based ingredients company CP Kelco has introduced its latest innovation in the gellan gum product line, the KELCOGEL® DFA Gellan Gum. Discovered by the company 40 years ago in bacterial culture in a lily pond, this ingredient is now processed via fermentation for industrial applications.
As an alternative to locust bean gum, this product improves desired suspension and mouthfeel of the drink. It ensures the extra protein, calcium, vitamins and other micronutrients stay evenly suspended, therefore simplifying ingredient list of the beverage item.
